Homemade Chicken Nuggets

ingredients

For the Nuggets

  • 1 – 1.25 pounds boneless skinless chicken breast
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1 tsp sugar
  • 1/4 cup cornstarch
  • 1/4 cup chicken broth (or water)

For the breading

  • 1 cup rice flour (you can use all purpose as well)
  • 2 eggs
  • 1 cup plain breadcrumbs (I use panko pulse a few times in a food processor)

Instructions

  • Cut chicken breasts up into cubes and place in food processor, pulsing until the meat is minced.
  • Mix the spices, corn starch, and chicken broth in a bowl until combined, then add in the chicken and mix until combined.
  • Next, line a sheet pan with wax paper.
  • Shape your minced chicken into whatever sizes and shapes you want and place them on the sheet pan.
  • Once all of your nuggets are made, place the sheet pan in the freezer for at least 30 minutes, until the meat is firm to the touch.
  • Heat vegetable oil in either a deep fry pan, using enough to cover the nuggets halfway. Or, you can use a deep fryer.
  • Dredge the nuggets in the flour, then the beaten egg, then the bread crumbs and place on a wire rack.
  • Fry the nuggets in batches until golden brown, flipping halfway through the cooking process.
  • Place the cooked nuggets on a paper towel lined plate or a wire rack to remove excess oil.
  • These are great for freezing for later. Just freeze them after you form them. Then all you have to do is pull them out, bread them, and fry them for a quick dinner.
  • You can change up the spices in these too. Or use flavored breadcrumbs for some variety.
  • These are great dipped in homemade BBQ sauce or honey mustard.
  • If you don’t want to mince the chicken you can use ground chicken or even turkey.
